Blondie’s Thanksgiving Recipes: Garlic Mashed Potatoes

Welcome back! It’s Day Two of Blondie’s Thanksgiving Recipes, and today we’re diving into one of my ride-or-die side dishes: Garlic Mashed Potatoes.

These potatoes aren’t just a side, they’re the side. Creamy, dreamy, and loaded with roasted garlic and melted butter, a “Smash hit” at the dinner table. You know the kind: smooth enough to swirl your spoon through, rich enough to make you forget there’s still turkey coming.
This recipe’s simple, classic, and perfect for your Thanksgiving table (or honestly, any night you need a little comfort). Whether you’re serving it up with gravy, turkey, or just eating it by the spoonful (no judgment) these mashed potatoes bring the kind of warmth that keeps everyone lingering around the table.
So, grab those spuds, roast that garlic, and let’s whip up something so good it could be dinner all on its own.
What You’ll Need:
- 2 lbs of potatoes Yukon Gold if you’re classy, Russets if you’re wild.
- 1 whole head of garlic (yes, the whole thing, don’t be shy).
- 4 tbsp butter (we don’t count calories in Blondie’s kitchen).
- ½ cup heavy cream
- 2 tbsp sour cream
- Salt & pepper be generous
- A drizzle of olive oil for roasting that garlic to golden perfection.
Directions:
1. Roast the garlic.
- Preheat your oven to 400°F (200°C).
- Slice the top off the garlic head to expose the cloves.
- Drizzle with olive oil, wrap it in foil, and roast for 35–40 minutes, until soft and golden.
- Let it cool slightly, then squeeze out the roasted cloves into a small bowl.
2. Prepare the potatoes.
- Peel and cut potatoes into even chunks (about 1½ inches).
- Place them in a large pot, cover with cold salted water, and bring to a boil.
- Cook for 15–20 minutes, or until the potatoes are fork-tender.
- Drain well and return them to the pot.
3. Mash it up.
- Add the butter and roasted garlic to the hot potatoes.
- Mash until mostly smooth.
- Pour in the heavy cream (start with half, add more for desired consistency) and keep mashing until creamy.
4. Finish strong.
- Stir in sour cream (if using), and season with salt and pepper to taste.
- Mix gently until everything’s smooth and fluffy.
5. Serve.
- Spoon into a serving bowl, add a small pat of butter on top, and sprinkle a bit of black pepper or chopped chives if you like.
